- 1 cup rolled oats
- 1/4 cup melted coconut oil
- 1/4 cup maple syrup
- 2 Tbsp nut milk

- 1/8 tsp sea salt
- 3 cups blackberries
- 1/4 cup unsweetened shredded coconut
- 1 Tbsp corn starch
- 1/8 tsp sea salt
- 1/4 cup honey
- 3/4 cup water
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine almond flour, rolled oats, melted coconut oil, maple syrup, nut milk, vanilla extract, and sea salt until crumbly.
- Press all but 1 cup of the mixture into the bottom of an 8-inch springform pan lined with parchment paper.
- Pre-bake the crust for about 10 minutes.
- For the filling, simmer blackberries, shredded coconut, corn starch, honey, and water in a saucepan until thickened (about 10-15 minutes).
- Pour the berry mixture into the pre-baked crust and top with remaining crumbs.
- Bake for another 10 minutes before cooling on a counter for 20 minutes and refrigerating for at least 2 hours before serving.
