Ingredients

  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 150 g granulated sugar (for apples)
  • 150 g granulated sugar (for custard)
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 2 tsp vanilla bean paste
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 180°C (350°F). Core and thinly slice the apples, tossing them with 150 g sugar and salt in a bowl. Set aside.
  2. In a saucepan, heat 600 ml of milk with 50 g sugar and salt until just below boiling. In another bowl, whisk egg yolks and cornstarch. Gradually add hot milk to the yolks while whisking. Return to low heat and stir until thickened.
  3. In a baking dish, layer half of the apple slices, followed by half of the custard. Repeat with remaining apples and custard.
  4. Cover with foil and bake for approximately 45 minutes; uncover for an additional 15 minutes until lightly browned.
  5. Allow cooling slightly before serving warm or chilled.
