  • 2 lamb shanks
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 3 large carrots, peeled and cut into chunks
  • 2 celery stalks, chopped
  • 2 tbsp tomato paste
  • 1 cup apple vinegar
  • 2 cups beef stock
  • 2 sprigs fresh thyme

Instructions

  1. Season the lamb shanks with salt and pepper. In a heavy pot, heat olive oil over medium-high heat and sear the shanks until browned (4-5 minutes per side). Remove and set aside.
  2. In the same pot, sauté onions until translucent (5 minutes), then add minced garlic for another minute.
  3. Stir in carrots and celery; cook for about 5 minutes until slightly softened. Mix in tomato paste.
  4. Deglaze with apple vinegar, scraping up brown bits; simmer for 2-3 minutes.
  5. Return lamb shanks to the pot, cover with beef stock, and place thyme on top.
  6. Bring to a gentle simmer, cover, reduce heat to low, and cook for about 2 hours until fork-tender.
