Ingredients
- 2 lamb shanks
 - 2 tbsp olive oil
 - Salt and pepper to taste
 - 1 large onion, sliced
 - 3 garlic cloves, minced
 - 3 large carrots, peeled and cut into chunks
 - 2 celery stalks, chopped
 - 2 tbsp tomato paste
 - 1 cup apple vinegar
 - 2 cups beef stock
 - 2 sprigs fresh thyme

- Season the lamb shanks with salt and pepper. In a heavy pot, heat olive oil over medium-high heat and sear the shanks until browned (4-5 minutes per side). Remove and set aside.
 - In the same pot, sauté onions until translucent (5 minutes), then add minced garlic for another minute.
 - Stir in carrots and celery; cook for about 5 minutes until slightly softened. Mix in tomato paste.
 - Deglaze with apple vinegar, scraping up brown bits; simmer for 2-3 minutes.
 - Return lamb shanks to the pot, cover with beef stock, and place thyme on top.
 - Bring to a gentle simmer, cover, reduce heat to low, and cook for about 2 hours until fork-tender.
