  • 1 large onion, chopped
  • 3 cloves garlic, minced

  • 2 celery stalks, diced
  • 2 tbsp tomato paste
  • 2 cups apple vinegar
  • 2 cups beef broth
  • Fresh rosemary and thyme
  • Bay leaves

  4. Deglaze with apple vinegar by scraping up browned bits from the bottom and simmering for 3-4 minutes.
  5. Return lamb shanks to the pot, add broth until nearly covered, toss in herbs, and bring to a simmer before covering.
