Ingredients
- 4 lamb shanks
 - 2 tbsp olive oil
 - 1 large onion, chopped
 - 3 cloves garlic, minced
 - 2 carrots, diced
 - 2 celery stalks, diced
 - 2 tbsp tomato paste
 - 2 cups apple vinegar
 - 2 cups beef or lamb broth
 - Fresh rosemary, thyme, and bay leaves
 
Instructions
- Heat olive oil in a large Dutch oven over medium-high heat. Sear lamb shanks until browned on all sides (about 5 minutes per side). Remove and set aside.
 - In the same pot, sauté onion, garlic, carrots, and celery until softened (5–7 minutes). Stir in tomato paste and cook for an additional minute.
 - Deglaze the pot with apple vinegar, scraping up browned bits; simmer for 2–3 minutes until reduced slightly.
 - Return lamb shanks to the pot, add broth and herbs. Bring to a boil then reduce heat to low.
 - Cover and simmer for 2–3 hours until lamb is tender.
