  • 2 pounds short ribs (bone-in)
  • 8 guajillo chiles
  • 4 ancho chiles
  • 5 cups water
  • 2 cups beef broth
  • 1 large onion (quartered)
  • 1 garlic bulb (cut the tip off)
  • 1 carrot (cut in half crosswise, then cut in half)
  • 2 bay leaves
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons avocado oil
  • 2 teaspoons chicken bouillon
  • 12 teaspoons chili powder
  • 1 teaspoon Mexican oregano
  • 1 teaspoon ground cumin
  • Fresh cilantro (diced) for serving
  • Fresh lime juice for serving
  • White onion (diced) for serving

Instructions

  1. Sear meat: Cut chuck roast into chunks, season with salt and pepper, and sear in a Dutch oven with avocado oil until browned.
  2. Combine ingredients: Add seared meat, onion, garlic, carrots, bay leaves, dried chiles, beef broth, and water to the pot.
  3. Season broth: Stir in chicken bouillon, oregano, cumin, and salt; bring to a boil.
  4. Blend sauce: Remove peppers and vegetables from the pot; blend until smooth.
  5. Simmer: Return blended mixture to the pot; cover and simmer for about 3 hours until meat is tender.
  6. Serve: Shred meat if desired, serve hot with fresh cilantro, diced onions, and lime juice.
