  • 2 tablespoons cornstarch
  • 2 1/2 cups whole milk
  • 1 large piece lemon peel (including pith)
  • 1 large piece orange peel (including pith)
  • 1 cinnamon stick
  • 5 large egg yolks
  • 1/2 cup white sugar (preferably caster)
  • Additional sugar for caramelization
  • Fresh fruit or berries for decoration (optional)

Instructions

  1. Heat the milk in a heavy-based saucepan with lemon peel, orange peel, and cinnamon stick until it simmers. Remove from heat.
  2. While the milk heats, mix cornstarch with a splash of water to create a slurry.
  3. Whisk egg yolks and sugar in another bowl until pale yellow. Add the cornstarch slurry and a splash of hot milk; mix well.
  4. Strain the citrus peels and cinnamon from the milk and gradually whisk in the egg mixture.
  5. Return to low heat, whisking constantly until thickened to pudding consistency.
  6. Divide into six ramekins and cover with plastic wrap; chill for at least four hours.
  7. Before serving, sprinkle sugar on top of each custard and caramelize using a blowtorch or broiler.
  8. Optionally garnish with fresh fruit before serving.
