  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup softened butter
  • 2/3 cup granulated sugar
  • 2 eggs (room temperature)
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk or almond milk (room temperature)
  • 2 large apples (peeled and chopped)

Instructions

  1. Preheat your oven to 350°F and prepare a 9×5-inch loaf pan with non-stick spray.
  2. In a bowl, mix together the brown sugar and cinnamon; set aside.
  3. In another bowl, cream the softened butter and granulated sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Gradually incorporate flour and baking powder alternately with milk until combined. Gently fold in chopped apples.
  5. Pour half of the batter into the loaf pan, sprinkle half of the cinnamon-sugar mixture over it, then add the remaining batter and top with the remaining mixture.
  6. Bake for about 55 minutes or until a toothpick inserted in the center comes out clean.
  7. While cooling slightly, mix powdered sugar with milk to create a glaze and drizzle over cooled bread before serving.
