  • 1 Tablespoon olive oil
  • dash garlic powder
  • dash salt
  • 1/2 teaspoon basil
  • dash pepper
  • 1/2 teaspoon oregano
  • 1 small zucchini
  • 1 medium tomato (diced)
  • 1/2 cup mozzarella cheese

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Butterfly slice chicken breasts into four thin pieces and season with garlic powder, salt, pepper, basil, and oregano.
  3. In a skillet over medium heat, warm olive oil and brown the chicken for 2-3 minutes on each side. Transfer to a baking dish.
  4. Sauté sliced zucchini in the same skillet until soft, then add diced tomato and seasonings; cook for an additional 2-3 minutes.
