  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves garlic, minced
  • 8 ounces feta cheese
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 4 large eggs
  • 1 cup chopped baby spinach

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In individual ramekins, divide the tomatoes, bell pepper, red onion, garlic, and feta cheese. Drizzle each with olive oil.
  3. In a bowl, mix oregano, thyme, salt, black pepper, and red pepper flakes; sprinkle over the vegetables.
  4. Bake for 25 minutes.
  5. Stir the mixture and add chopped spinach; create wells in the mixture and crack an egg into each well.
  6. Return to the oven and bake for another 10 minutes until eggs are set.
  7. Serve warm with optional fresh herbs as toppings.
