Ingredients
- 2 lbs boneless chicken thighs or breasts
- 1 cup plain Greek yogurt
- 2 tbsp olive oil
- 3 tbsp lemon juice + zest
- 2 cloves garlic, crushed
- 2 tbsp zaatar seasoning
- 1 tsp kosher salt
- 1/2 tsp black pepper
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F.
- In a bowl, whisk together Greek yogurt, olive oil, lemon juice and zest, garlic, zaatar, salt, black pepper until smooth.
- Place chicken in a plastic bag or container and pour marinade over it. Seal tightly and refrigerate for at least 30 minutes (or overnight for better flavor).
- Coat a baking dish with cooking spray or olive oil. Remove excess marinade from chicken and place in the dish in a single layer.
- Bake uncovered for about 45 minutes or until golden brown and the internal temperature reaches 165°F.
