Ingredients

Scale
  • 3 ripe bananas (330 grams mashed)
  • 2 medium zucchinis (300 grams grated)
  • ½ cup sugar
  • ¼ cup olive oil
  • ¼ cup almond milk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ⅓ cup dark chocolate chips
  • ½ cup chopped walnuts

Instructions

  1. Preheat the oven to 350°F (180°C). Prepare a loaf pan by lining it with parchment paper.
  2. In a large bowl, mash the bananas and mix with sugar, olive oil, almond milk, and vanilla extract until well combined.
  3. Grate the zucchinis and fold them into the banana mixture after squeezing out excess moisture.
  4. Stir in flour, baking powder, baking soda, and salt until just combined; do not overmix.
  5. Add dark chocolate chips and walnuts if desired.
  6. Pour batter into the loaf pan and bake for 55 to 65 minutes or until a toothpick inserted comes out mostly clean.
  7. Allow cooling on a wire rack for at least three hours before slicing.
