Ingredients
- 1 1/2 cups cooked rice (preferably day-old)
- 1 chicken breast, diced
- 2 eggs, beaten
- 1/2 cup diced carrots
- 1/3 cup green peas
- 2 cloves garlic, minced
- 2 green onions, sliced (for garnish)
- 2 to 3 tablespoons soy sauce
- 1 tablespoon oil (plus more as needed)
- 1/4 cup mayonnaise
- 2 tablespoons sweet chili sauce
- 1 tablespoon Sriracha (adjust to taste)
- 1 teaspoon rice vinegar
Instructions
- In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar to create the bang bang sauce. Set aside.
- Heat oil in a large skillet or wok over medium-high heat. Add diced chicken and cook until browned and cooked through, approximately 5–6 minutes. Remove from pan.
- In the same pan, scramble the beaten eggs until just set. Remove from pan and set aside.
- Add more oil if needed and sauté diced carrots and minced garlic for about 2–3 minutes until softened. Stir in green peas and cook for another minute.
- Add cold cooked rice to the pan and stir-fry for about 3–4 minutes on high heat.
- Return the cooked chicken and scrambled eggs to the pan; stir in soy sauce.
- Pour in the prepared bang bang sauce; mix well until everything is heated through.
- Garnish with sliced green onions before serving.
