  • 1 1/2 cups cooked rice (preferably day-old)
  • 1 chicken breast, diced
  • 2 eggs, beaten
  • 1/2 cup diced carrots
  • 1/3 cup green peas
  • 2 cloves garlic, minced
  • 2 green onions, sliced (for garnish)
  • 2 to 3 tablespoons soy sauce
  • 1 tablespoon oil (plus more as needed)
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon rice vinegar

Instructions

  1. In a small bowl, mix mayonnaise, sweet chili sauce, Sriracha, and rice vinegar to create the bang bang sauce. Set aside.
  2. Heat oil in a large skillet or wok over medium-high heat. Add diced chicken and cook until browned and cooked through, approximately 5–6 minutes. Remove from pan.
  3. In the same pan, scramble the beaten eggs until just set. Remove from pan and set aside.
  4. Add more oil if needed and sauté diced carrots and minced garlic for about 2–3 minutes until softened. Stir in green peas and cook for another minute.
  5. Add cold cooked rice to the pan and stir-fry for about 3–4 minutes on high heat.
  6. Return the cooked chicken and scrambled eggs to the pan; stir in soy sauce.
  7. Pour in the prepared bang bang sauce; mix well until everything is heated through.
  8. Garnish with sliced green onions before serving.
