  • 1 package baby bok choy, about 1 lb
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons vegetable oil
  • 2 tablespoons low-sodium soy sauce
  • Optional: 1 tablespoon oyster sauce

Instructions

  1. Prepare all ingredients by slicing the beef against the grain and rinsing the bok choy.
  2. Heat a wok over medium-high heat, adding vegetable oil until shimmering.
  3. Cook the beef in a single layer until browned on one side (2-3 minutes), then flip and cook for another minute. Remove from the wok.
  4. In the same wok, stir-fry garlic and ginger for about 30 seconds until fragrant, then add bok choy leaves and cook for 2-3 minutes until wilted.
  5. Return the cooked beef to the wok, add soy sauce (and oyster sauce if using), and toss everything together for an additional minute.
  6. Serve immediately over rice or noodles.
