  • 3 ½4 lb beef shoulder
  • ½ lb turkey bacon
  • 1 large onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 can (500 ml) apple juice
  • 3 cups chicken broth
  • 1 cup prunes
  • 2 apples
  • 2 tbsp cornstarch

Instructions

  1. Trim excess fat from the beef shoulder and cut into 2-inch chunks. Pat dry.
  2. Heat a heavy-duty braiser or Dutch oven over medium-high heat. Season the beef with salt and brown in batches.
  3. Add turkey bacon to the pot, sauté until crispy, then remove.
  4. Sauté onions for 3-4 minutes until softened; add garlic and cook another minute.
  5. Deglaze with apple juice, then stir in mustards, thyme, salt, and chicken broth with the browned beef.
  6. Cover and simmer on low for one hour.
  7. Stir in prunes and cooked turkey bacon; add quartered apples and simmer for an additional 10-15 minutes.
  8. Make a cornstarch slurry with some braising liquid, stir back into the stew to thicken.
