  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1 teaspoon turmeric
  • ½ teaspoon ground mustard
  • ½ teaspoon cayenne pepper (optional)
  • ½ teaspoon ground ginger
  • ½ teaspoon cinnamon
  • 2 tablespoons tomato paste
  • ¼ cup apple cider vinegar
  • 1 cup low-sodium beef stock

Instructions

  1. Cut beef into 2-inch cubes and season with salt and pepper.
  2. Heat oil in a cast iron skillet over medium-high heat and brown the beef on all sides. Set aside.
  3. In the same skillet, caramelize onions for about 5-7 minutes; add garlic and cook for an additional minute.
  4. Stir in the spices and tomato paste until well mixed; then add vinegar and stock.
  5. Return beef to skillet, cover, and simmer on low heat for about 60 minutes until tender.
