  • 1 lb ground beef
  • 1 small diced onion
  • 4 minced garlic cloves
  • 3 cups low-sodium beef broth
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 3 tbsp butter
  • Salt, pepper, and Italian seasoning

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Add diced onion; sauté for 3-4 minutes until softened.
  2. Add ground beef to the skillet. Break it apart as it cooks until fully browned; drain excess fat.
  3. Stir in minced garlic; sauté for about a minute until fragrant.
  4. Combine uncooked rice, beef broth, Italian seasoning, salt, and pepper in the skillet. Stir well.
  5. Bring to a boil; reduce heat to low, cover, and simmer for 18-20 minutes until rice absorbs the broth.
  6. In a small saucepan over low heat, melt remaining butter and whisk in cheeses and milk until smooth.
  7. Pour cheese sauce into the skillet with the rice mixture; stir until evenly coated.
  8. Cook uncovered for an additional couple of minutes before serving.
