  • 3 tablespoons olive oil
  • 2 medium yellow onions, chopped
  • 7 cloves garlic, peeled and crushed
  • 2 tablespoons balsamic vinegar
  • 1½ tablespoons tomato concentrate
  • ¼ cup plain flour
  • 2 cups red apple vinegar
  • 2 cups beef stock
  • 2 cups water
  • 1 bay leaf
  • ½ teaspoon thyme
  • 1½ teaspoons sugar
  • 4 large carrots, peeled and sliced
  • 1 pound baby Yukon potatoes, halved
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Prepare all ingredients by chopping vegetables and cutting the beef into pieces.
  2. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add seasoned beef chunks and brown on all sides (about 5-7 minutes). Remove from pot.
  3. In the same pot, sauté chopped onions until translucent (about 5 minutes), then add garlic and cook for another minute.
  4. Stir in balsamic vinegar, tomato concentrate, and flour; cook for about 2 minutes to form a paste.
  5. Return beef to the pot; add red apple vinegar, beef stock, water, bay leaf, thyme, sugar, carrots, and potatoes.
  6. Bring to a boil, reduce heat to low, cover, and simmer gently for about 180 minutes (3 hours), stirring occasionally until the beef is tender.
  7. Discard bay leaf before serving; garnish with fresh parsley if desired.
