  • 6 Strips Turkey Bacon (chopped)
  • 1 Red Onion (chopped)
  • 1 Red Bell Pepper (seeded and chopped)
  • 2 Cups Beef Stock
  • 1 Tablespoon Cocoa Powder
  • 1 Can Tomato Paste (6 oz)
  • 1 Jalapeño (seeded and minced, optional)
  • 1 Tablespoon Oregano (dried)
  • 2 teaspoons Cumin
  • 2 teaspoons Kosher Salt
  • 1 teaspoon Black Pepper (ground)
  • 1 ½ teaspoons Smoked Paprika
  • 1/2 teaspoon Ground Coriander
  • 1 Tablespoon Chili Powder
  • 1 Tablespoon Garlic (minced)
  • Sour Cream (for serving)
  • Cilantro (for garnish)
  • Shredded Cheese (for topping)

Instructions

  1. In a large pot, cook the turkey bacon until crisp; remove and set aside.
  2. Sauté chopped onions and red bell pepper in the same pot until tender.
  3. Add ground beef and brown thoroughly; drain excess grease.
  4. Stir in all remaining ingredients along with three-fourths of the cooked turkey bacon.
  5. Simmer for at least 45 minutes to allow flavors to meld.
  6. Serve hot with sour cream, shredded cheese, cilantro, and remaining turkey bacon as toppings.
