  • 1 cup sour cream
  • 3/4 cup cocoa powder
  • 2 tsp instant coffee
  • 3/4 cup boiling water
  • 300g dark chocolate (for frosting)
  • 3 tbsp corn syrup
  • 8 oz cream cheese, room temperature
  • 1/3 cup cocoa powder (for frosting)
  • 1 cup powdered sugar (for frosting)
  • 1/4 tsp salt
  • 1 1/4 cup heavy cream, chilled

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, cocoa powder, and salt until well combined.
  3. In another bowl, mix eggs, vegetable oil, sour cream, and instant coffee until smooth.
  4. Gradually combine the wet ingredients with the dry ingredients until just mixed; then slowly stir in boiling water.
  5. Pour the batter into prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. For the fudge frosting, melt dark chocolate and beat with cream cheese until smooth; add corn syrup and powdered sugar, then fold in whipped cream.
  7. Assemble by frosting the cooled cake layers generously.
