  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • 8 oz cream cheese (room temperature)
  • 1/4 cup granulated sugar (for swirl)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
  2. In one bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
  3. In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Gradually add dry ingredients until just combined.
  4. Fill muffin cups about 3/4 full with batter.
  5. In a separate bowl, beat cream cheese with granulated sugar and egg yolk until smooth. Dollop about one tablespoon onto each muffin and swirl gently with a toothpick.
  6. Bake for 18–20 minutes or until a toothpick inserted comes out clean.
