Instructions
- Preheat your oven to 375°F (190°C) and line a muffin pan with paper liners.
- In one bowl, whisk together flour, pumpkin spice, baking soda, and salt; set aside.
- In another bowl, mix pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil, and vanilla until smooth. Gradually add dry ingredients until just combined.
- Fill muffin cups about 3/4 full with batter.
- In a separate bowl, beat cream cheese with granulated sugar and egg yolk until smooth. Dollop about one tablespoon onto each muffin and swirl gently with a toothpick.
