  • 1 lb. Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 68 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning
  • Salt and pepper

Instructions

  1. Flatten chicken breasts to an even thickness and rub with olive oil and blackened seasoning.
  2. Heat a skillet over medium-high heat, add olive oil, and cook chicken for about 3-4 minutes until dark amber on one side. Flip, reduce heat, add butter and garlic, cook until the internal temperature reaches 165°F.
  3. In the same skillet, melt remaining butter, sauté garlic, then stir in heavy cream and blackened seasoning; simmer to thicken.
  4. Cook noodles until al dente, reserving some pasta water. Combine cooked noodles with sauce and top with sliced chicken.
