  • 250 g digestive or graham crackers
  • 75 g butter
  • 300 g fresh blueberries
  • 800 g full-fat cream cheese
  • 260 g granulated sugar
  • 200 g sour cream
  • 4 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine crushed crackers and sugar, then mix in melted butter. Press into the bottom of a springform pan.
  2. Toss fresh blueberries with granulated sugar, flour, and lemon juice; set aside.
  3. In a large bowl, beat cream cheese until smooth, then gradually add sugars and remaining ingredients until well combined. Add eggs one at a time.
  4. Pour half the filling over the crust, layer half the blueberries on top, followed by the remaining filling and blueberries. Bake for about 85 minutes until set.
  5. Allow to cool before removing from the pan.
