  • 1 boneless lamb shoulder (approx. 34 lbs)
  • 8 oz lions mane mushrooms, torn or roughly chopped
  • 1 large yellow onion, sliced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup dry apple vinegar
  • 2 cups beef or lamb stock

Instructions

  1. Preheat oven to 300°F (150°C). Slice onion and mince garlic.
  2. In a Dutch oven over medium-high heat, add oil or broth and sear the seasoned lamb shoulder until browned on all sides (5-7 minutes). Remove and set aside.
  3. Sauté onions until translucent (3-4 minutes), then add garlic and tomato paste; cook for an additional minute.
  4. Deglaze the pot with dry apple vinegar, scraping up browned bits; simmer for 2-3 minutes.
  5. Return the lamb to the pot along with lions mane mushrooms. Add stock until covering two-thirds of the meat. Cover and braise in the oven for 3 hours or until tender.
  6. Let rest for 10 minutes before slicing or shredding. Serve warm with your favorite sides.
