Ingredients
- 1 boneless lamb shoulder (approx. 3–4 lbs)
 - 8 oz lions mane mushrooms, torn or roughly chopped
 - 1 large yellow onion, sliced
 - 4 cloves garlic, minced
 - 2 tbsp tomato paste
 - 1 cup dry apple vinegar
 - 2 cups beef or lamb stock
 
Instructions
- Preheat oven to 300°F (150°C). Slice onion and mince garlic.
 - In a Dutch oven over medium-high heat, add oil or broth and sear the seasoned lamb shoulder until browned on all sides (5-7 minutes). Remove and set aside.
 - Sauté onions until translucent (3-4 minutes), then add garlic and tomato paste; cook for an additional minute.
 - Deglaze the pot with dry apple vinegar, scraping up browned bits; simmer for 2-3 minutes.
 - Return the lamb to the pot along with lions mane mushrooms. Add stock until covering two-thirds of the meat. Cover and braise in the oven for 3 hours or until tender.
 - Let rest for 10 minutes before slicing or shredding. Serve warm with your favorite sides.
