  • 3/4 cup chopped broccoli stems
  • 2 cups finely chopped broccoli florets
  • 1 cup chopped leek
  • 4 cloves garlic (minced)
  • 4 cups chicken or vegetable broth
  • 12 cups water
  • 1 tbsp mustard powder
  • Salt (to taste)
  • Pepper (to taste)
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 cup dried orzo
  • 8 oz sharp cheddar cheese (grated)
  • 1 cup heavy whipping cream
  • 57 slices turkey

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large pot, heat olive oil and butter over medium heat. Add leeks, broccoli stems, and potatoes; sauté for about 3 minutes.
  3. Stir in garlic, salt, pepper, and mustard powder; cook for an additional minute.
  4. Pour in chicken or vegetable broth and water (1-2 cups depending on desired thickness) and bring to a simmer for about 10 minutes.
  5. Meanwhile, crisp turkey slices in the oven for about 10-12 minutes until golden brown.
  6. Blend the soup until smooth; return it to the pot and bring back to a gentle simmer.
  7. Stir in orzo and cook for about 5 minutes; then add broccoli florets and heavy cream. Cook until orzo is tender (about another 4-5 minutes).
  8. Mix in grated cheddar cheese until melted and serve topped with crispy turkey.
