  • ¼ cup + 1 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions

  1. Prepare the brown butter by melting cold unsalted butter in a saucepan over medium heat until golden brown; let cool slightly.
  2. In a mixing bowl, combine flour and salt. Add cooled brown butter, mixing until crumbly.
  3. Gradually mix in water and vinegar until dough forms. Divide into two discs, wrap in plastic wrap, and refrigerate for at least one hour.
  4. Preheat your oven to 375°F (190°C).
  5. In a separate bowl, combine peaches and strawberries with sugar, cornstarch, lemon juice, lemon zest, and salt; toss gently to coat.
  6. Roll out one disc of dough to fit your pie dish. Fill with fruit mixture and cover with another rolled-out disc or create a lattice pattern.
  7. Brush the top crust with whisked egg for a golden finish.
  8. Bake for about 70 minutes or until filling bubbles and crust is golden brown.
