Ingredients
- 4 vine-ripened tomatoes, diced
- 1/2 small red onion, diced
- 2 tbsp fresh basil, chopped
- 1 clove garlic, minced
- 500 g spaghetti pasta
- 5 tbsp extra-virgin olive oil
- 3 tbsp balsamic vinegar glaze
- 1/2 tsp oregano
- 1/4 tsp fine sea salt
- 1/4 tsp black pepper
Instructions
- Cook the spaghetti in a large pot of salted boiling water according to package directions until al dente. Drain well.
- In a medium bowl, combine diced tomatoes, red onion, basil, garlic, oregano, salt, pepper, and 3 tbsp olive oil. Mix well and let marinate for 10–15 minutes.
- In a large heatproof bowl or skillet, drizzle the drained pasta with the remaining 2 tbsp olive oil.
- Add the bruschetta mixture to the pasta and toss until evenly combined. Adjust seasoning as necessary.
- Drizzle with balsamic glaze before serving and garnish with extra basil if desired.
