  • 1 ½ cups chicken broth
  • ¾ cups heavy cream (or half and half)
  • 10 oz Rotel diced tomatoes with green chilies
  • 3 tablespoons butter
  • 3 cloves garlic (minced)
  • Cajun seasoning
  • Olive oil
  • 1 tablespoon honey
  • 2 teaspoons hot sauce
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon brown sugar
  • ½ teaspoon mustard powder
  • ½ teaspoon oregano
  • Pinch of cayenne pepper
  • Pinch of red pepper flakes
  • 3 tablespoons flour
  • Lime juice
  • Lime wedges
  • Fresh cilantro (roughly chopped)

Instructions

  1. Season chicken breasts with Cajun seasoning and dredge in flour.
  2. Heat olive oil and butter in a skillet over medium-high heat; cook chicken for 6-7 minutes on each side until golden brown.
  3. Remove chicken and sauté garlic in the same skillet for 30 seconds.
  4. Add chicken broth, then stir in heavy cream, honey, hot sauce, brown sugar, mustard powder, oregano, cayenne pepper, and red pepper flakes; simmer for 5 minutes.
  5. Return chicken to the skillet along with diced tomatoes; top with cheese and cover until melted.
  6. Drizzle lime juice over the dish before serving.
