  • 1 lbs sirloin or ribeye steak tips, cut into bite-sized pieces
  • 12 oz penne pasta
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • Salt & black pepper, to taste
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup whole milk
  • 4 oz cream cheese, softened
  • 1 cup freshly grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp Cajun seasoning, to tie the flavor together
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a pot of salted water to a boil. Add the penne pasta and cook until al dente according to package instructions. Once cooked, drain well, reserving ½ cup of the cooking water. Set aside.
  2. Season the steak tips with Cajun seasoning, garlic powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Sear the steak tips for about 3-4 minutes per side until browned and cooked to your liking. During the last minute of cooking, add butter to baste the steak pieces. Remove from heat and set aside.
  3. In the same skillet used for the steak, melt 2 tablespoons of butter over medium heat. Sauté minced garlic for about 1 minute until fragrant. Pour in heavy cream and milk; stir in cream cheese until smooth. Gradually add Parmesan, mozzarella, and an additional teaspoon of Cajun seasoning, stirring until thickened. If needed, add reserved pasta water for desired consistency.
  4. Toss cooked penne into the creamy sauce until well coated. Gently return seared steak tips back into the skillet with pasta. Stir gently to combine all ingredients; let warm together for another minute or two.
  5. Garnish with chopped fresh parsley before serving hot.
