  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Oil for frying

Instructions

  1. Drain the canned peaches thoroughly and chop them into smaller pieces; set aside.
  2. In a mixing bowl, whisk together flour, baking powder, cinnamon, and salt.
  3. In another bowl, beat the egg and mix in milk and vanilla extract until well combined.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined; fold in the chopped peaches carefully.
  5. Heat about 2 inches of oil in a deep skillet over medium heat until it reaches around 350°F (175°C).
  6. Drop spoonfuls of batter into the hot oil without overcrowding the pan; fry for about 2–3 minutes per side until golden brown.
  7. Use a slotted spoon to remove fritters from oil and let drain on paper towels; dust with powdered sugar if desired and serve warm.
