  • 1 Tbsp lemon juice
  • 1/2 cup water
  • 1/3 cup packed brown sugar
  • 1 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 Tbsp cornstarch
  • 3 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 1 cup unsalted butter (room temperature)
  • 1 1/4 cups brown sugar (packed)
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • Caramel sauce for drizzling

Instructions

  1. In a saucepan over medium heat, combine the diced apples, lemon juice, water, brown sugar, cinnamon, nutmeg, and cornstarch. Cook until the apples are tender and the mixture thickens. Set aside to cool.
  2. Preheat your oven to 350°F (175°C). In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy. Add in the eggs one at a time and mix well after each addition. Stir in the vanilla extract.
  3. In another bowl, whisk together the all-purpose flour, cornstarch, baking soda, cinnamon, and salt. Gradually add this dry mixture to the wet ingredients until fully combined.
  4. Take about a tablespoon of cookie dough and flatten it slightly in your hand. Place about a teaspoon of cooled apple filling in the center. Fold the dough around the filling to enclose it completely and form a ball. Place on a baking sheet lined with parchment paper.
