  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 1 tablespoon brown sugar
  • 3 cups chicken broth
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 cup jasmine rice
  • 2 cups water (for rice)
  • 2 green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Cut chicken into bite-sized pieces and season with salt and pepper.
  2. Marinate chicken in soy sauce, sesame oil, garlic, ginger, and brown sugar for 10 minutes.
  3. Rinse jasmine rice until clear. In a separate saucepan, boil water, add rice, cover, and simmer for 15 minutes.
  4. Heat oil in a large pot over medium-high heat. Sauté marinated chicken until caramelised (about 5-7 minutes).
  5. Add chicken broth and rice vinegar; bring to a boil then reduce to simmer.
  6. Gradually stir in cornstarch mixture to thicken the broth; simmer for an additional 5 minutes.
  7. Adjust seasoning as needed before serving over the cooked jasmine rice.
  8. Garnish with sliced green onions.
