  • 12 cups cubed French bread
  • 3 pears, peeled and diced
  • 5 eggs
  • 2 cups milk
  • 1 cup heavy whipping cream
  • ½ cup sugar
  • 2 tsp ground cardamom (divided)
  • 2 tbsp butter
  • 2 tbsp brown sugar
  • 1 oz apple juice (optional)
  • 2 tbsp raw turbinado sugar (optional)
  • 10 cardamom pods
  • 1 ½ cups sugar (for syrup)
  • ¼ cup water
  • 6 tbsp butter (for syrup)
  • ¼ cup orange juice
  • zest of 1 orange
  • ½ tsp kosher salt
  • pinch ground cardamom

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine cubed French bread, melted butter, diced pears, brown sugar, optional apple juice, and 1 teaspoon of cardamom; toss gently.
  3. In another bowl, whisk together eggs, milk, heavy whipping cream, sugar, kosher salt, and remaining cardamom. Pour over the bread mixture and stir until combined.
  4. Transfer to a greased baking dish and bake for about 60 minutes until set and golden brown.
  5. While baking, prepare cardamom syrup by simmering cardamom pods, sugar, water, and butter until thickened; stir in orange juice and zest.
  6. Allow the pudding to cool slightly before serving with syrup or whipped cream.
