- 12 cups cubed French bread

- 1 oz apple juice (optional)
- 2 tbsp raw turbinado sugar (optional)
- 10 cardamom pods
- 1 ½ cups sugar (for syrup)
- ¼ cup water
- 6 tbsp butter (for syrup)
- ¼ cup orange juice
- zest of 1 orange
- ½ tsp kosher salt
- pinch ground cardamom
Instructions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, combine cubed French bread, melted butter, diced pears, brown sugar, optional apple juice, and 1 teaspoon of cardamom; toss gently.
- In another bowl, whisk together eggs, milk, heavy whipping cream, sugar, kosher salt, and remaining cardamom. Pour over the bread mixture and stir until combined.
- Transfer to a greased baking dish and bake for about 60 minutes until set and golden brown.
- While baking, prepare cardamom syrup by simmering cardamom pods, sugar, water, and butter until thickened; stir in orange juice and zest.
- Allow the pudding to cool slightly before serving with syrup or whipped cream.
