  • 1 tbsp Cajun seasoning

  • 1/4 tsp black pepper
  • 4 tbsp butter
  • 4 cloves garlic
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1 lb rigatoni pasta
  • Salt to taste
  • Optional: chopped chives for garnish

Instructions

  1. Cook rigatoni according to package instructions until al dente. Drain and set aside.
  2. In a bowl, toss cubed chicken with olive oil, Cajun seasoning, smoked paprika, garlic powder, and black pepper.
  3. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Cook chicken until golden brown (6-8 minutes), then remove from skillet.
  4. In the same skillet, melt remaining butter and sauté minced garlic for about 30 seconds.
  5. Whisk in flour to create a roux; cook for 1 minute.
  6. Gradually whisk in milk and chicken broth; bring to a simmer while stirring constantly.
  7. Reduce heat and add both cheeses, stirring until melted and smooth. Season with salt to taste.
  8. Combine cooked pasta and chicken with the sauce; toss gently to coat evenly.
