- 1 cup brown sugar
- 4 large eggs (room temperature)
- 1 tablespoon brewed coffee
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 2 (8-ounce) blocks cream cheese (room temperature)
- ½ cup granulated sugar
- 1 pinch salt
Instructions
- Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan and line with parchment paper.
- In a microwave-safe bowl, melt butter with 1 cup of chocolate chips in intervals, stirring until smooth. Whisk in cocoa powder, sugars, eggs, coffee, and vanilla until combined.
- Stir in flour and salt until just mixed; reserve some batter for later. Add remaining chocolate chips.
- Bake brownie base for 20 minutes for fudginess or up to 30 minutes for cakey texture.
- In another bowl, beat cream cheese with sugar and salt until smooth. Add eggs one at a time and mix in vanilla.
- Pour cheesecake mixture over brownie base and dollop reserved brownie batter on top; swirl gently.
- Bake for an additional 10 minutes at 350°F, then reduce temperature to 325°F (160°C) and bake for another 20–25 minutes until edges are set.
- Cool completely before refrigerating for at least an hour before slicing.
