  • ¾ cup Dutch-processed cocoa powder
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 4 large eggs (room temperature)
  • 1 tablespoon brewed coffee
  • 1 tablespoon vanilla extract
  • 1 cup all-purpose flour
  • 2 (8-ounce) blocks cream cheese (room temperature)
  • ½ cup granulated sugar
  • 1 pinch salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9-inch square baking pan and line with parchment paper.
  2. In a microwave-safe bowl, melt butter with 1 cup of chocolate chips in intervals, stirring until smooth. Whisk in cocoa powder, sugars, eggs, coffee, and vanilla until combined.
  3. Stir in flour and salt until just mixed; reserve some batter for later. Add remaining chocolate chips.
  4. Bake brownie base for 20 minutes for fudginess or up to 30 minutes for cakey texture.
  5. In another bowl, beat cream cheese with sugar and salt until smooth. Add eggs one at a time and mix in vanilla.
  6. Pour cheesecake mixture over brownie base and dollop reserved brownie batter on top; swirl gently.
  7. Bake for an additional 10 minutes at 350°F, then reduce temperature to 325°F (160°C) and bake for another 20–25 minutes until edges are set.
  8. Cool completely before refrigerating for at least an hour before slicing.
