  • 1 lb skinless boneless chicken thighs

  • ½ teaspoon chili powder
  • salt and black pepper (to taste)
  • 2 tablespoons olive oil
  • ⅓ cup basil pesto (store-bought or homemade)
  • 3 tablespoons Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons freshly squeezed lime juice
  • 1 cup corn kernels (cooked)
  • 1 red bell pepper (diced)
  • 6 strips turkey bacon (cooked and sliced)
  • fresh basil (chopped)

Instructions

  1. 1. Cook the pasta in salted boiling water until al dente; drain and cool.
  2. 2. Season chicken thighs with Italian seasoning, chili powder, salt, and pepper. Cook in olive oil until fully cooked. Cool and slice.
  3. 3. In a large bowl, combine pasta, chicken, corn, bell pepper, turkey bacon, yogurt, mayonnaise, lime juice, basil, salt, and pepper. Toss gently to mix.
