- 8 oz orecchiette pasta
- 1 lb skinless boneless chicken thighs
- 1 teaspoon Italian seasoning
- ½ teaspoon chili powder
- salt and black pepper (to taste)
- 2 tablespoons olive oil
- ⅓ cup basil pesto (store-bought or homemade)
- 3 tablespoons Greek yogurt
- 2 tablespoons mayonnaise
- 2 tablespoons freshly squeezed lime juice
- 1 cup corn kernels (cooked)
- 1 red bell pepper (diced)
- 6 strips turkey bacon (cooked and sliced)
- fresh basil (chopped)
Instructions
- 1. Cook the pasta in salted boiling water until al dente; drain and cool.
- 2. Season chicken thighs with Italian seasoning, chili powder, salt, and pepper. Cook in olive oil until fully cooked. Cool and slice.
- 3. In a large bowl, combine pasta, chicken, corn, bell pepper, turkey bacon, yogurt, mayonnaise, lime juice, basil, salt, and pepper. Toss gently to mix.
- 4. Adjust seasoning to taste; serve chilled or at room temperature.
