Ingredients

Scale
  • 6 tablespoons butter
  • 1 cup diced yellow onion
  • 1 cup matchstick carrots
  • 1 cup diced celery
  • 4 cloves garlic (minced)
  • 3 tablespoons all-purpose flour
  • 1 (12 oz) can evaporated milk
  • 1 quart chicken stock (+1 extra cup if using raw chicken)
  • 4 cups shredded cooked chicken (or 1.5 lbs raw, skinless chicken breasts/thighs)
  • Fresh thyme, black pepper, and salt to taste
  • 2 cups all-purpose flour (for dumplings)
  • 1 tablespoon baking powder (for dumplings)
  • 1 teaspoon freshly cracked black pepper (for dumplings)
  • 1 teaspoon salt (for dumplings)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried thyme, optional for dumplings)
  • 3/4 cup whole milk (for dumplings)
  • 4 tablespoons melted butter (for dumplings)

Instructions

  1. Sauté the vegetables in a large heavy-bottomed pot over medium-high heat with melted butter for about 5 minutes until softened. Add minced garlic and cook for another minute.
  2. Stir in flour and cook for one minute while stirring continuously. Gradually add evaporated milk and chicken stock while stirring until the mixture thickens.
  3. If using raw chicken, add it along with an additional cup of broth; simmer for about 20 minutes until cooked through, then shred the chicken back into the pot. If using pre-cooked chicken, bring soup to a boil before adding it along with seasoning; lower heat and let simmer uncovered while preparing dumplings.
  4. Prepare dumplings by mixing flour, baking powder, salt, pepper, thyme, milk, and melted butter until combined. Drop spoonfuls of the mixture into the simmering broth; cover and cook for about 15 minutes without lifting the lid.
