  • 2 Tbsp avocado oil (divided)
  • 1 cup diced boneless skinless chicken breasts
  • 1/2 cup diced yellow onion
  • 2 cloves garlic (minced)
  • 1 tsp minced fresh ginger
  • 1 cup fresh pineapple chunks
  • 3/4 cup frozen peas and carrots (thawed)
  • 3 cups cooked jasmine rice
  • 2 Tbsp reduced sodium soy sauce
  • 1 Tbsp plant-based oyster sauce alternative
  • 1 tsp toasted sesame oil
  • Diced green onions for garnish

Instructions

  1. Prepare all ingredients by chopping vegetables and cutting chicken into small pieces.
  2. Heat 1 tablespoon of avocado oil in a wok or large skillet over medium-high heat.
  3. Add the diced chicken, seasoning with salt and pepper; stir-fry until golden brown (about 5-7 minutes).
  4. Incorporate onion, garlic, and ginger; stir-fry for another 2-3 minutes until fragrant.
  5. Add pineapple chunks and thawed peas and carrots; cook for an additional 3 minutes.
  6. Stir in cooked jasmine rice along with soy sauce, plant-based oyster sauce alternative, and toasted sesame oil; mix thoroughly to combine.
  7. Garnish with diced green onions before serving.
