  • 1 pound boneless skinless chicken breasts

  • ½ teaspoon onion powder

  • ½ teaspoon dried rosemary
  • ½ teaspoon paprika
  • ¼ to ½ teaspoon chili powder
  • 1 small yellow onion
  • 3 cups broccoli florets
  • 1 zucchini
  • 1 small yellow bell pepper
  • 1 small red bell pepper
  • ¼ cup low sodium chicken broth (or apple juice)

Instructions

  1. Cut chicken into 1-inch pieces and season with salt and pepper.
  2. Mix the spices in a bowl; sprinkle half over the chicken and toss with olive oil.
  3. Heat 1 tablespoon oil in a skillet over medium-high heat and cook the chicken until browned (6-8 minutes). Remove and keep warm.
  4. Add remaining oil to the skillet; sauté onions for 2 minutes, then add broccoli, zucchini, yellow bell pepper, and red bell pepper. Season with remaining spices.
  5. Stir in chicken broth; return chicken to the skillet and heat through for another minute.
