Ingredients
- 2 boneless, skinless chicken breasts
- 2 medium sweet potatoes, sliced

- Salt & pepper to taste
- 1 tbsp olive oil (for sweet potatoes)
- Pinch of cinnamon or smoked paprika (optional)
Instructions
- Preheat oven to 425°F (220°C). Slice sweet potatoes and toss with olive oil, salt, and optional seasoning. Roast for 25-30 minutes.
- Season chicken breasts with olive oil and spices. Grill or sear over medium-high heat until golden brown and cooked through (internal temperature of 165°F/74°C). Let rest before slicing.
- Steam broccoli florets for about 5-6 minutes until tender. Lightly season with salt.
- In meal prep containers, layer sliced chicken, roasted sweet potatoes, and steamed broccoli. Allow to cool before sealing.
