- 1–1 ½ lb chicken breasts
- ¼ cup lime juice
- 2 tbsp canola oil
- 1 tsp jalapeño (minced)
- 1 tsp honey
- 1 tsp salt
- 1 tsp chili powder
- ½ tsp paprika
- ½ tsp onion powder
- ½ tsp garlic powder
- ¼ tsp cumin
- ¼ tsp coriander
- ¼ tsp cayenne pepper (optional)
- ¼ tsp ground black pepper
- 2 tsp olive oil
- 2 tbsp red onion (chopped)
- ½ cup frozen corn
- ½ cup black beans (rinsed)
- ¼ tsp salt

- Soft taco flour tortillas
- Fresh cilantro (chopped)
- Avocado (chopped)
- Avocado dressing

Instructions
- Prepare the marinade by mixing half of the lime juice, canola oil, jalapeño, honey, and spices in a Ziplock bag. Add chicken, coat well, and refrigerate for at least 30 minutes.
- Cook the marinated chicken in a non-stick skillet over medium-high heat for about 10–13 minutes until fully cooked. Let it rest before slicing.
- Sauté red onion in olive oil until translucent; add frozen corn and black beans; season with salt and pepper.
- Assemble tacos with sliced chicken, vegetable mixture, avocado chunks, cilantro, and avocado dressing.
