- 3/4 cup (168 g) unsalted butter, softened
- 3/4 cup (165 g) light brown sugar, packed
- 1/4 cup (50 g) granulated white sugar
- 2 egg yolks, at room temperature
- 1 1/2 tsp vanilla extract
- 5 oz chocolate, chopped
- 1/4 cup + 2 tbsp (90 ml) heavy cream
- 1/4 cup (85 g) cherry preserves
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, whisk together flour, cocoa powder, baking powder, and sea salt.
- In another bowl, beat softened butter with light brown and granulated sugars until light and fluffy.
- Add egg yolks and vanilla extract; mix until combined.
- Gradually blend dry ingredients into wet ingredients until just combined.
- Scoop tablespoon-sized dough balls onto the baking sheet, creating indents in each cookie with your thumb.
- Bake for about 10 minutes or until set but soft in the center. Let cool slightly on the sheet.
- For the ganache, heat heavy cream until simmering, pour over chopped chocolate, stir until smooth.
- Fill each cookie indent with cherry preserves followed by ganache; let set before serving.
