  • 1/2 cup (40 g) Dutch-process cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt
  • 3/4 cup (168 g) unsalted butter, softened
  • 3/4 cup (165 g) light brown sugar, packed
  • 1/4 cup (50 g) granulated white sugar
  • 2 egg yolks, at room temperature
  • 1 1/2 tsp vanilla extract
  • 5 oz chocolate, chopped
  • 1/4 cup + 2 tbsp (90 ml) heavy cream
  • 1/4 cup (85 g) cherry preserves

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, cocoa powder, baking powder, and sea salt.
  3. In another bowl, beat softened butter with light brown and granulated sugars until light and fluffy.
  4. Add egg yolks and vanilla extract; mix until combined.
  5. Gradually blend dry ingredients into wet ingredients until just combined.
  6. Scoop tablespoon-sized dough balls onto the baking sheet, creating indents in each cookie with your thumb.
  7. Bake for about 10 minutes or until set but soft in the center. Let cool slightly on the sheet.
  8. For the ganache, heat heavy cream until simmering, pour over chopped chocolate, stir until smooth.
  9. Fill each cookie indent with cherry preserves followed by ganache; let set before serving.
