  • 1 large egg yolk (room temperature)
  • 2 1/2 teaspoons vanilla extract

Instructions

  1. Melt butter in a heavy-bottomed saucepan until it darkens slightly and becomes nutty in aroma. Cool to room temperature.
  2. In a bowl, mix flour, cornstarch, baking soda, and salt; set aside.
  3. Beat cooled butter with both sugars until combined. Add eggs and vanilla; mix until creamy.
  4. Gradually stir in dry ingredients until just combined.
  5. Chill dough for at least an hour (up to 72 hours for best flavor).
  6. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  7. Form cookie dough into balls and bake for 8 – 10 minutes until golden brown.
  8. Let cool for a minute on the baking sheet before transferring to a wire rack.
