  • 3 large eggs (room temperature)
  • 55 g light brown sugar
  • 65 g granulated sugar
  • 1 tsp vanilla extract
  • 65 g plain flour (all-purpose)
  • 15 g cocoa powder
  • 75 g dark chocolate (75% melted)
  • 2¼ tsp powdered vegan gelatin
  • 45 ml fresh lemon juice
  • 400 g fresh raspberries
  • 480 ml cold double cream
  • 50 g dark chocolate shavings for garnish

Instructions

  1. Preheat the oven to 180°C (350°F) and prepare a greased 9-inch round baking pan with parchment paper.
  2. Whisk eggs, light brown sugar, and granulated sugar until thick and pale; mix in vanilla extract.
  3. Sift together flour, cocoa powder, baking powder, espresso powder, and salt; fold into egg mixture along with melted dark chocolate.
  4. Pour batter into the pan and bake for about 20 minutes or until a toothpick comes out clean.
  5. For the mousse, dissolve the vegan gelatin in lemon juice over low heat. Blend raspberries and sugar until smooth; strain if desired.
  6. Whip cold double cream to soft peaks and gently fold in raspberry puree and dissolved gelatin.
  7. Once the sponge cools, pour the mousse over it and refrigerate for at least four hours or overnight before serving.
