Ingredients
- 3 large eggs (room temperature)
- 55 g light brown sugar
- 65 g granulated sugar
- 1 tsp vanilla extract
- 65 g plain flour (all-purpose)
- 15 g cocoa powder
- 75 g dark chocolate (75% melted)
- 2¼ tsp powdered vegan gelatin
- 45 ml fresh lemon juice
- 400 g fresh raspberries
- 480 ml cold double cream
- 50 g dark chocolate shavings for garnish
Instructions
- Preheat the oven to 180°C (350°F) and prepare a greased 9-inch round baking pan with parchment paper.
- Whisk eggs, light brown sugar, and granulated sugar until thick and pale; mix in vanilla extract.
- Sift together flour, cocoa powder, baking powder, espresso powder, and salt; fold into egg mixture along with melted dark chocolate.
- Pour batter into the pan and bake for about 20 minutes or until a toothpick comes out clean.
- For the mousse, dissolve the vegan gelatin in lemon juice over low heat. Blend raspberries and sugar until smooth; strain if desired.
- Whip cold double cream to soft peaks and gently fold in raspberry puree and dissolved gelatin.
- Once the sponge cools, pour the mousse over it and refrigerate for at least four hours or overnight before serving.
