Instructions
- Preheat your oven to 350°F (175°C) and grease two loaf pans or one bundt pan.
- In a large bowl, whisk together the oil, sugar, eggs, vanilla extract, and buttermilk until smooth.
- In another bowl, mix the flour, cinnamon, baking powder, baking soda, and salt.
- Gradually combine the dry ingredients into the wet mixture until just mixed; then fold in the chopped pecans.
- Pour the batter into prepared pans and optionally top with a mixture of brown sugar and cinnamon.
- Bake for 45-55 minutes for loaves or 55-65 minutes for a bundt cake until a toothpick comes out clean.
