  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 2 cups all-purpose flour

  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 cup chopped pecans, toasted if desired
  • ½ cup brown sugar (optional)
  • ½ cup chopped pecans (optional)
  • 1 tsp ground cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two loaf pans or one bundt pan.
  2. In a large bowl, whisk together the oil, sugar, eggs, vanilla extract, and buttermilk until smooth.
  3. In another bowl, mix the flour, cinnamon, baking powder, baking soda, and salt.
  4. Gradually combine the dry ingredients into the wet mixture until just mixed; then fold in the chopped pecans.
  5. Pour the batter into prepared pans and optionally top with a mixture of brown sugar and cinnamon.
  6. Bake for 45-55 minutes for loaves or 55-65 minutes for a bundt cake until a toothpick comes out clean.
  7. Let cool in the pan before transferring to a wire rack to slice.
