Ingredients
- 3 1/2 lbs beef chuck, cut into 2" pieces
 - 5 strips turkey bacon, cut into 1" pieces
 - 1 yellow onion, chopped
 - 3 large carrots, peeled and chopped
 - 5 garlic cloves, minced
 - 2 tablespoons tomato paste
 - 3 tablespoons all-purpose flour
 - 2 cups bold red apple vinegar
 - 2 cups beef stock
 - Fresh thyme
 - Bay leaves
 
Instructions
- Preheat your oven to 350°F (175°C).
 - In a Dutch oven over medium-low heat, cook turkey bacon until browned; set aside.
 - Season beef with salt and pepper. Increase heat to medium-high and sear beef until browned on all sides; remove from pan.
 - Sauté onions and carrots in butter for 2–3 minutes; add garlic and cook for another minute.
 - Stir in tomato paste and flour; cook until darkened (about 3 minutes).
 - Add apple vinegar to deglaze the pot, then return beef and bacon along with stock, thyme, and bay leaves. Cover and bake for 2 1/2 hours.
 - In the last half hour, sauté mushrooms and pearl onions until browned; stir into stew before finishing cooking.
 - Let sit covered for about 30 minutes before serving.
