Ingredients
- 1.5 lbs beef chuck, cut into 1.5-inch cubes
- Salt & freshly ground black pepper, to taste
- 2 tbsp vegetable oil
- 1 large yellow onion, thinly sliced
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp red or yellow curry paste
- 1 tsp ground turmeric
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup beef broth or water
- 1 tbsp brown sugar
- Juice of lime
- 1 cup jasmine rice
- 4 garlic naan, warmed or lightly charred
- Chopped cilantro or Thai basil, for garnish
Instructions
- Season beef cubes with salt and pepper, then sear in vegetable oil over medium-high heat until browned on all sides. Set aside.
- In the same pot, cook sliced onion until soft. Add minced garlic and grated ginger; sauté briefly.
- Stir in curry paste and turmeric, then add coconut milk, broth, brown sugar, and lime juice. Mix well.
- Return beef to the pot, cover, and braise on low heat for about 2 hours until tender.
- Cook jasmine rice according to package instructions.
- Warm garlic naan in an oven or skillet.
- Serve beef over rice with naan on the side; garnish with chopped cilantro or Thai basil.
