Ingredients
- 1.5 lbs beef chuck, cut into 1.5-inch cubes
- 2 tbsp vegetable oil
- 1 large yellow onion, thinly sliced
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 tbsp curry paste (red or yellow)
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup beef broth or water
- 1 cup jasmine rice
Instructions
- Heat vegetable oil in a large skillet over medium-high heat. Season beef with salt and pepper, then brown in batches until all sides are golden. Set aside.
- In the same skillet, sauté sliced onions, garlic, and ginger until softened (about 5 minutes). Stir in curry paste and turmeric; cook for another minute.
- Return browned beef to the skillet and pour in coconut milk and broth (or water), followed by brown sugar and lime juice. Bring to a gentle simmer.
- Cover partially and reduce heat to low; braise for about 1.5 to 2 hours until the beef is tender.
- Cook jasmine rice according to package instructions while the beef is braising.
