  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1 tsp ground cumin
  • 1/2 tsp chili powder (optional)

  1. Heat vegetable oil in a large pot over medium-high heat. Sear the beef cubes for about 3-4 minutes on each side until browned. Remove and set aside.
  2. In the same pot, sauté the chopped onion until translucent (about 5 minutes), then add minced garlic and grated ginger. Cook for one more minute until fragrant.
  3. Stir in red curry paste, turmeric, cinnamon, cumin, and optional chili powder; cook for an additional 2-3 minutes.
  4. Return the beef to the pot and add coconut milk or broth as desired. Mix well.
  5. Bring to a gentle simmer, cover, and reduce heat to low. Cook for about 2-3 hours until the beef is tender.
  6. Serve hot over rice or your choice of grain. Garnish with fresh herbs if desired.
