  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tsp ground cinnamon
  • 1 cup unsalted butter (melted and cooled)
  • 1 cup brown sugar (packed light brown sugar)
  • 1/2 cup granulated sugar
  • 1 tsp pure vanilla extract
  • 2 large eggs (room temperature)
  • 1 1/2 cups semi-sweet chocolate chips

Instructions

  1. Blend instant coffee in a food processor until fine.
  2. In a medium bowl, sift flour and mix with blended coffee, baking soda, baking powder, salt, and cinnamon.
  3. In a large bowl, combine melted butter (cooled), brown sugar, granulated sugar, vanilla extract, and eggs; stir until well mixed.
  4. Gradually add dry mixture to wet ingredients; fold in chocolate chips.
  5. Preheat oven to 350°F (175°C) and line cookie sheets with parchment paper.
  6. Scoop dough onto sheets and bake for 12-14 minutes until edges are golden but centers are soft.
  7. Cool on the pan for 5 minutes before transferring to a cooling rack.
